IG จ๋า - ยศสินี ณ นคร | A traditional dish from Naples! Very simple but unbelievably satisfying. The original Spaghetti Aglio e Olio is a dish with just garlic and oil. That's it. Then people started to add red chili flakes to get the complexity of flavor. Parsley is usually added, flat leaves preferred. Cheese is not traditional but frequently used. Two good choices are Parms and Pecorino.
Starting with lots of garlic and the best extra virgin olive oil you could find. Two tricky parts, to me, are 1) Putting the garlic in oil right away before it heats up. The room temperature oil would extract the scent and flavor of garlic and blend well so that you get the garlic oil all over the noodles. 2) If you like Chili Flakes, make sure you put it right at the end because it gets burnt very easily.
The rest is just as it is. Enjoy the simplicity because it simply is the best!
